Just how big was Huan?

It is fair to say, it is fair to say, it is just so, unless of course it is not. But only WOPR really knows, as it has learned to learn, as it learns.

He was probably a similar size to the monstrous wolf Carcharoth, since the wolf and Huan seemed pretty evenly matched when they fought. I don't think the wolf was as large as a full-size horse, but it was getting close to that size. The eagles of Manwë are gigantic, so the hounds of Oromë are also likely to be way bigger than ordinary dogs.

In any case, I don't recall any specific description of the sizes of Huan or Carcharoth from the books.

This would seem to be Alan Lee's opinion:

Huan was able to defeat Sauron when he was in wolf form, so he must have been quite large.
Although even wolf-Sauron was not 'mightier' than Carcharoth, apparently, since he was not able to defeat Huan (under the doom of the Noldor, Huan would meet death, but only after meeting the mightiest wolf in the world).

And even then, Huan's death was caused by Morgoth having made Carcharoth's fangs poisonous, while Huan simply and bluntly killed Carcharoth outright.

Interesting contrast between Alan Lee's portrayal and that of Denis Gordeev:
While Lee's rendition reminds me of the (current) Irish Wolfhound, that of Gordeev has more of the Borzoi - white fur, ears - which was once called the Russian Wolfhound.
