Hm maybe I should. I also have a problem with the texture though I think but hopefully since they’re sweeter it will be tolerable.

As far as carrots go, I definitely belong to the Bugs Bunny faction: munch 'em raw (but in my case peeled ...).
Slightly behind that is the sliced-and-cooked version, mostly accompanied by peas.
I don't remember ever drinking pure carrot juice - perhaps as an ingredient of vegetable mix juices, like the V8 brand in the US.
But carrots in any form combined with ice cream ... somehow not compatible in my imagination.
And saffron ice cream - don't think I've ever run across that, with or without carrots ... 😳

We buy carrot juice in 1L bottles here
It's not actually ice cream and its texture is quite different.
I'm not sure if I'm describing it correctly but it's something like melted mozzarella cheese but frozen?
You can often find pieces of pistachios and frozen cream in it and it obv tastes like saffron and also rose water.
It's a really old dessert though and goes way back ...like 300 year BC.
