recipe for lembas

i am sure that some of you folks out there can think of a recipe for lembas.
i know that lembas contains cram, so if we could make a recipe for that in this thread as well, it would make things a bit easier.
 
A google search finds a ton but this one sounds good:

2 1/2 cups of flour
1 Tablespoon baking powder
1/4 teaspoon salt
8 Tablespoons cold butter
1/3 cup sugar
2/3 cup milk
1/2 teaspoon lemon extract
Preheat over to 425 degrees.
Mix flour, baking powder, and salt in a large bowl. Chop butter into mixture with a pastry cutter or knead in with your fingers until you get a crumbly mixture. Add sugar and mix. Add milk and lemon extract and stir with a fork until dough forms.
Roll the dough out about 1/2 inch thick. Cut out 3 inch squares and transfer to a cookie sheet. Criss-cross each square from corner to corner with a knife. Bake for about 12 minutes or until set and lightly golden. Makes 10 to 12.

Lembas Recipe

Cook Time: 30 minutes
Total Time: 1 hour15 minutes

Ingredients (U.S. Measurements)​

  • 1 1/2 stick 12T - butter, soften
  • 1/2 cup - brown sugar
  • 1/3 cup - honey
  • 2 - eggs large
  • 1 T - orange blossom water
  • 2 cups - all purpose flour
  • 1/2 cup - almond meal
  • 1 - lemon zest
  • 1 T - vanilla extract
  • 1/3 cup - sliced almonds
  • 6 - banana leaves large

Instructions​

  • Preheat oven to 360°F/180°C
  • Cream together the softened butter, sugar, and honey.
  • Add your orange blossom water, vanilla extract, and lemon zest. Mix to combine.
  • Add one egg at a time and scrape the batter in between each addition.
  • Add your four and almond meal in two to three additions. Scrape in between each addition.
  • Add almond slices and mix to combine.
  • Wrap the dough in plastic wrap. Keep the dough 1/2" thick and square to make it easier to cut later.
  • Refrigerate for 30-40 minutes.
  • Once the dough is firm, cut it into 2"x3" rectangles, it should be 1/2" thick. My leaves are 14" in length and 11" in width. If your leaves are bigger or smaller, cut your leaves accordingly.
  • Lightly grease your baking pan. You can keep the lembas fairly close together since these are not going to spread.
  • Bake for 20-30 minutes. It should be firm and light golden brown. Let these cool before wrapping.

Not sure I want to give it a try as the past attempts at Lembas by many decent cooks resulted in Cram.



This is Two Trees' Recipe:

3 eggs
1 cup honey (preferably wild honey)
1 tablespoon grated fresh nutmeg
2 tablespoon of orange juice
4 tablespoons of grated almonds
1 teaspoon (3 1000mg capsules) of hemp-seed oil
1/4 cup fresh melted butter
2-1/4 cups semolina flour
1/2 teaspoon (sea) salt

Well a griddle iron is like a waffle iron (you could use a waffle iron). It has two sides of heat.

Just mix all the dry stuff together then add eggs, melted butter, orange juice and hemp oil.

After that is mixed, mix in the honey.

Mix well in a mixing bowl. Pour into griddle.

Wait 6-10 minutes until it is done in griddle.

The end result is a medium brown crust with a honey yellow inside.



I found one I may try... gluten-free ... the 'protein powder' makes me leery...

Lembas Bread​

You don’t need to be a Tolkien Fan to enjoy this Gluten-Free Lembas Recipe... but if you are, all the nerding out in the commentary will make more sense!

Total Time: 1 hour 35 minutes
Servings: 12 3" biscuits

Equipment​

  • 2 Baking Sheets
  • Parchment Paper

Ingredients​

  • 1 cup Unsalted butter softened
  • ⅓ cup Honey
  • 2 tablespoon Milk Or unsweetened almond milk
  • ½ cup Masa Flour
  • ½ cup Gluten-free oat flour Or Sorghum flour
  • ½ cup Vanilla protein powder*
  • ½ cup Sliced almonds
  • ½ cup Thinly sliced dried apricots
  • ¼ cup Coconut Flour
  • ¼ cup Ground flax seed flax meal
  • 1 tablespoon Tapioca Starch/Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Xanthan Gum
  • ½ teaspoon Salt
  • ¾ teaspoon Cardamom
  • ¼ teaspoon Dried Rosemary finely crumbled/chopped
  • Corn starch for rolling

Instructions​

  • Mix butter and honey together just until combined – do not cream it or over beat it. Add milk, gently mix until combined and smooth
  • In a separate bowl, whisk together remaining ingredients. Add dry mix to butter and honey, mix until combined. Wrap dough in plastic film, chill for 1 hour.
  • Preheat the oven to 350 degrees F, line baking sheets with parchment paper.
  • Generously sprinkle clean work surface with corn starch, roll dough to ½″ thick. Cut into 3″ squares, and carefully transfer biscuits to prepared baking sheets, leaving 2″ between each. Cut a shallow “X” into each cake, if desired.
  • Bake for about 15 minutes, or until lightly golden. Allow cakes (biscuits?) to cool on cookie sheets for at least 5 minutes before moving, cool completely before serving.
  • If you want to get fancy with it, wrap them in leaves, and tie with twine. (I used collard greens).

Notes​

* Choose your protein powder wisely! If it's something you don't like to drink, it'll make the bread taste weird.

  • 150 g - butter softened
  • 100 g - brown sugar packed
  • 1/4 cup - honey
  • 2 - eggs large
  • 1 tsp - vanilla extract
  • 1 cup - all purpose flour
  • 1/3 cup - whole wheat flour
  • 150 g - mixed nuts chopped
  • 40 g - cranberries
  • 1/3 cup - rolled oats

Instructions​

  • Preheat oven to 350°F/177°C
  • In a mixer, paddle your softened butter until smooth.
  • Add your brown sugar and honey. Paddle until combined.
  • Add one egg at a time, make sure to scrape the bowl. Add your vanilla extract.
  • Add your flour in three additions. Make sure to scrape the bowl in between.
  • Add your nuts, cranberries, and oats.
  • Scoop into cookies. I used a 1/4 cup to scale out each cookie.
  • Place the cookie onto a baking sheet with parchment and shape into biscuit shape.
  • Refrigerate for 30 minutes.
  • Bake the cookies for approximately 15 minutes and let cool on rack.

Will do! The orange blossom water and banana leaves might take a bit of finding in stores, but shouldn’t be a problem!

I’m curious why others’ attempts lacked a good result. 🤔 With the ingredients, it seems like it should have a sweet, pleasant taste with a hint of zest.

One would think. The best of those attempts which was shared around at the line party for the opening of Two Towers in December 2002 had a taste of honey with a zest of cinnamon. The texture just wasn't right to me.
 
I've often thought ground macadamia nuts should be one of the main ingredients in an attempt to approximate lembas.
I had some plain cupcakes before (without icing) which had macadamia nuts ground into a paste mixed into the batter. They were not dry, as these nuts have a very high fat content. They also had a sweet mild flavour, neither distinct/overpowering nor boring to eat. They were also surprisingly filling for their size, again due to the high fat content of the nuts.
