I was a little underwhelmed with Khazad- Dum. It's supposed to be the greatest kingdom of the Dwarves, and it just didn't live up to it for me. It's one of my favourite parts of FotR and I wanted to see more of the great halls that Tolkien described - but in their prime, as opposed to the faded glory we see in the book - but I just didn't get that from what we saw.
My favorite part of the series so far has been everything to do with the dwarves. Very fun, looks great. Visually it reminds me a lot of the dwarven cities from Dragon Age, not necessarily devoid of life and using water and other clever devices to grow their food and such.
My favourite seen of the whole thing was either The rock smashing contest between durin and Elrond (the right of sigin-tarag) or the introduction of Disa who I really like. The scenery in and out of the dwarven realms in ROP is stunning.
