I have this book called Tolkien the illustrated encyclopidia and it has a map which shows ME during the first age of the trees and the ages of darkness and it shows that in the south of ME there is an inland sea called Ringal and east of the sea there are the yellow mts and i would like to know why you never here of them?

The map you are referring to is probably derived from Map IV in the HoMeIV. In the "Spring of Arda" the world had a rather symetrical design where the Yellow Mountains were part of the 4 major surrounding mountains (the Blue, Red-, Yellow- and Grey-Mountains) in N_S direction. But this design did not last very long:
But the symmetry of the ancient Earth was changed and broken in the first Battle of the Gods, when Valinor went out against Utumno, which was Melko's stronghold, and Melko was chained. Then the sea of Helkar (which was the northern lamp) became an inland sea or great lake, but the sea of Ringil (which was the southern lamp) became a great sea flowing north-eastward and joining by straits both the Western and Eastern Seas.
Therefor the Yellow Mountains no longer were distinct mountains, but must have become part of the "Dark Land" ("South Land") , which usually shows on the maps of the First Age.
